A Healthier Alternative To Olive Oil
Sam Fairs of Hill Farm Oils has been producing cold-pressed rapeseed oil for nearly three years on his family’s Suffolk farm where acres of rolling countryside are covered in brilliant yellow rape flower every summer.
“We realised the amazing qualities of rapeseed oil and started to cold press it, filter and then bottle our own oil. Rapeseed oil has a beautiful light texture, wonderful yellow colour and a nutty flavour – which won us a Gold at the 2005 Great Taste Awards!!
The oil is incredibly versatile, as it has a higher burn point than olive oil, so you can use it for roasting and frying, while it still has all the oil’s healthy characteristics. It has the lowest saturated fat content of any oil available, and an incredible 11 times the Omega 3 of olive oil – great for blood circulation and young brains.
“We use it all the time,” says Sam’s wife Clare, who is also part of the team. “Lottie, 6, and Harry, 2, have grown up with me cooking with it. You can use it for everything, from roasting to Yorkshire puddings, frying an egg, baking bread and flapjacks, to mixing in a salad dressing or a marinade – even on its own!”
Hill Farm Oil also has a higher Vitamin E content, the natural antioxidant, which also helps look after the Omega 3 during cooking – and ensures a longer shelf life.
Hill Farm Oil is fully traceable, GM free, low on food miles – it’s available in all Waitrose stores, also in local delis and farm shops across Britain. And by mail order too from www.hillfarmoils.com
