Young’s Seafood Lends Its Support To Fish Chefs Of The Future! Marta Bell and Christopher Webb of Guernsey College of Further Education were named ‘UK Seafood Champions of the Year’ in the annual competition for student chefs, organised by the Grimsby Institute with support from Young’s and Seafish.

The competition – now in its ninth year – has become one of the most respected contests for catering students. This year for the first time, Mitch Tonks, respected fish chef and founder of the award-winning ‘FishWorks’ chain of seafood restaurants, was invited by Young’s Seafood to lead the judging panel.*

As well as receiving a trophy, medals and cheque for £1000, the winning team will undertake a valuable week’s training placement – working either with Young’s development chefs or in one of Mitch Tonks’ FishWorks restaurants.

Wynne Griffiths, chief executive of Young’s, who presented the trophies to the winners, says, “We are delighted once again to support this contest, which is a valuable forum for young chefs to demonstrate their imagination and expertise in fish cookery.”

Mitch Tonks said, “Judging the contest was a really interesting and enjoyable experience. And since the students are required to devise recipes using ‘under utilised’ species, the contest is a fantastic illustration of the wonderful dishes that can be created with interesting, less well known seafood such as whiting, dab, redfish and megrim.”
