Rice Is Nice
Carluccio’s are holding a Rice Promotion in their caffes until 12th Feb 2006. To celebrate their wonderful Carnaroli and Vialone Nano risotto rice and the introduction of their new Wild Red Rice, Carluccio’s would like you to join them for a red wine risotto cooking demonstration.
At 6.30pm on 19th and 25th of January in their Smithfield Caffe, customers will be shown how to make a warming, red wine risotto. A commentary will be given on the ingredients, the preparation, and the simple rules that should be followed to make the perfect risotto – a wonderful dish at this time of year. The demonstration will of course be followed by a tasting. Those who choose to dine at the Smithfield’s caffe after the demonstation, will enjoy a *free bottle of wine.

WILD RED RICE WITH PRAWNS
- 200gr Wild Red Rice
- 100gr Cooked Prawns
- 60ml (4 Tbsp) Extra virgin olive oil
- 15gr Red chilli pepper (deseeded & chopped)
- ¼ Lemon zest
- 100gr Passata
- 1Tbsp Chopped parsley
- Salt, Pepper
Cook the rice in boiling salted water for around 40 minutes.
Drain.
In a pan, heat the extra virgin olive oil and lightly fry the lemon zest and chillies for 30 seconds
Add the rice, prawns and cook for a few minutes
Season
Add the passata and cook for another few minutes
Add the chopped parsley and serve
