New Season’s White Truffles In Demand At Sapori

New Season’s White Truffles In Demand At Sapori Aphrodisiac, food lovers’ Achilles heel and chefs’ very special friend, fresh truffles have long held a unique place in the food world. Sapori Truffles, Scotland’s biggest importer of truffle products from Italy, will be supplying top chefs and shops across the UK, as well as a discerning private customer base, with the new season’s prized white truffles from the end of September.

The increasingly widespread interest in carefully sourced, quality products combined with a gastronomically conscious generation of European travellers have given truffles a place outside the realms of Michelin-star restaurants. Sapori Truffles has already imported over 25kg summer truffles this year to meet demand.

Gianpaolo La Greca, the founder and owner of Sapori, says  “Truffles and truffle products are perceived to be very expensive. There is no doubt that they are costly, but used properly they are very affordable. A little goes a long way: just a few drops of truffle oil are needed in a risotto, and a small amount of fresh Perigord infused into chocolate makes an unimaginable difference to a pudding. The taste and aroma is so unique; it totally changes a dish.”

La Greca sources his products from Urbani Tartufi, a family firm regarded as the true pioneers of truffle culture in Italy. He supplies a UK-wide market, which includes top chefs such as Andrew Fairlie of Gleneagles and Fortnum and Mason in London.

Michelin star chef Andrew Fairlie says, “Gianpaolo has introduced a lot of chefs to truffles who never would have dreamt of using them. I think he has just made them so much more accessible, and he supplies something no-one else can; the quality of truffles are second to none. I was surprised to find that even when I went to Italy myself I couldn’t match the quality of his white truffles. “

The online shopping facility www.saporitruffles.co.uk attracts the majority of Sapori’s custom. Truffles, truffle oils, truffle honey and a range of other aromatic products can be bought from the site, and La Greca also offers advice on menu development and planning using this unique and sought after ingredient. The service includes bespoke sourcing of products that are more difficult to find.
