This magnificent Surrey hotel also has two excellent restaurants, the fantastic Latymer and the newly launched Brasserie & Oyster Bar.

The Brasserie & Oyster Bar has had a makeover to give it a more contemporary look and now has a 'theatre' cooking area and rotisserie. Coupled with a spectacular granite chequered floor and hand crafted stained glass windows, the restaurant now has a lively ambience. And the menus have been tweaked to match the informal atmosphere.

A 3 course dinner here could consist of Avocado and ‘White Lodge Farm’ bacon, with shallot dressing as starter followed by roasted duck leg confit, puy lentils, ‘Mrs Tee’s’ mushrooms, bacon and button onions with a side of buttered English asparagus and a rich chocolate bread and butter pudding to finish. Alternatively you can sample the seafood caught fresh that morning. Roasted diver caught king scallops, spicy sausage risotto, hazelnut and citrus dressing for your starter, dressed Cornish crab, rustic country bread and finish with the incredibly indulgent double chocolate cake with Cornish clotted cream.

The freshness of the ingredients is evident in every meal. As Executive chef Karl Edmeunds says, “All our seafood is caught off the British coast and delivered to us the same day. In particularly nasty weather conditions it is sometimes not possible for the fishing boats to go out and on such rare occasions we may not be able to offer the full seafood selection, but I would rather this than serve a substandard product.” And it is this passion and commitment to the quality of their ingredients that makes the Oyster bar such a treat.
