Soak Your Spirit - Mixed berries work a treat in this dish. Simply soak a selection of fruit pieces in Finlandia Classic Vodka for a minimum for an hour, and use the fruity treats as pancake fillings. The vodka-infused berries also act as the perfect accompaniment for whipped cream or ice-cream. Finlandia Classic Vodka can be substituted for a fruit fusion of choice, the options are endless.
Instructions
- Soak 100g of frozen mixed berries in Finlandia classic vodka. Use just enough vodka to coat the fruit
- Pour two tablespoons of pancake batter into a hot pan and tilt pan to coat base evenly
- Cook until pancake moves freely then toss until pancake is golden on both sides
- Place the mixed fruit in the pancakes and roll or fold the pancake into a parcel
- Pour over cream and sprinkle over a handful of berries to finish

Flambéed crepes with grapefruit – To ignite your inner flame, why not try flambéing the pancakes in Finlandia Vodka’s award-winning Grapefruit Fusion? Garnish with fresh grapefruit segments and you’re good to go.
Instructions: Flambéing is easier than you think.
- Pour two tablespoons of pancake batter into a hot pan and tilt pan to coat base evenly (see pancake mix recipe below for how to make the batter)
- Cook until pancake moves freely then toss until pancake is golden on both sides
- Pour 50ml of Grapefruit Fusion Finlandia Vodka on top of the pancake and heat it until it sets on fire
- Once flames have died down, serve immediately
- The alcohol will burn away after a few moments, making way for a delicious grapefruit flavour
Mango Cream Dream - For pancakes of distinction, the Mango Cream Dream recipe is not to be missed. Finlandia’s Mango Fusion infuses with whipped cream to provide a sweet, fruity kick that tickles the taste buds.
Instructions:
- Pour two tablespoons of pancake batter into a hot pan and tilt pan to coat base evenly
- Cook until pancake moves freely then toss until pancake is golden on both sides
- For the Mango Cream Dream filling, put 500ml single cream in a large mixing bowl
- Add 35g icing sugar and 50ml of Finlandia Mango Fusion
- Mix the ingredients thoroughly with an electric whisk (preferably multi-speed). The vodka will mix perfectly and the cream will begin to fluff up

Bittersweet Pancakes – Everyone enjoys pancakes with a twist of lemon. This recipe goes one step further by adding a taste of lime in the form of flavoured vodka. The zest of the lemon and the zing of the lime is guaranteed to revitalise the taste buds and get the mouth watering.
Instructions
- Pour two tablespoons of pancake batter into a hot pan and tilt pan to coat base evenly
- Cook until pancake moves freely then toss until pancake is golden on both sides
- Line the cooked pancakes with a twist of lemon
- Add a tablespoon of sugar and 50ml Finlandia Lime Fusion. The tangy lime will compliment the traditional lemon flavour
- Sprinkle with lemon zest for decoration
And the basic, Pancake mix
Ingredients
- 100g Plain flour
- 275ml milk
- 1 egg
- 25g butter
- Pinch of salt
Instructions
- Sift 100g of plain flour with a pinch of salt into a bowl and break in an egg with a wooden spoon
- Gently add 275ml of milk, a little at a time, and continue beating the egg until a smooth batter forms
- Heat 25g of butter in a 7-inch frying pan
- Once the pan is hot, put in two tablespoons of batter and tilt the pan to coat the base evenly
- Cook until the pancake moves freely, then toss or turn until pancake is golden on both sides
