Strawberry & Green Olive Piquant SaladThe unusual combination of ingredients works together beautifully in this stunning salad.

Ingredients

  • 400g (14oz) organic strawberries, stalks removed
  • 50g (2oz) pimiento stuffed olives, halved
  • 10g (1/2oz) capers
  • 40g (1 1/2oz) peppadew or peppadillo peppers, cut into thin strips
  • Freshly ground black pepper
  • Olive oil, for drizzling
  • Frisee, red chicory, little gem lettuce or mixed salad leaves

Method

  • Cut the strawberries in half (or into quarters if large), then place them in a large bowl.  Add the olives, capers and peppadew or peppadillo peppers.
  • Season with freshly ground black pepper and drizzle with a little olive oil, mixing gently together.
  • Serve on salad leaves of your choice.
  • Tip: You’ll find the bright red peppadew or peppadillo peppers bottled in brine.  Drain them well before use.
