Strawberry & Green Olive Piquant Salad
The unusual combination of ingredients works together beautifully in this stunning salad.
Ingredients
400g (14oz) organic strawberries, stalks removed
50g (2oz) pimiento stuffed olives, halved
10g (1/2oz) capers
40g (1 1/2oz) peppadew or peppadillo peppers, cut into thin strips
Freshly ground black pepper
Olive oil, for drizzling
Frisee, red chicory, little gem lettuce or mixed salad leaves
Method
Cut the strawberries in half (or into quarters if large), then place them in a large bowl. Add the olives, capers and peppadew or peppadillo peppers.
Season with freshly ground black pepper and drizzle with a little olive oil, mixing gently together.
Serve on salad leaves of your choice.
Tip: You’ll find the bright red peppadew or peppadillo peppers bottled in brine. Drain them well before use.
