Summer Berries And Five Spice And Maisala SabayonThis one must be one of the easiest desserts ever, fantastic to look at and taste; any variety of berries will do. Also when in season gooseberries are excellent this way.

Serves 4

Ingredients

  • 1 punnet of strawberries
  • 1 punnet of blueberries
  • 1 punnet of blackberries
  • 1 punnet of raspberries
  • 150 grams of sugar
  • Pinch of cinnamon
  • 2 x star anise
  • 25ml of balsamic vinegar
  • ½ glass of red wine
  • 8 x free range egg yolks
  • 150 grams of sugar
  • 25ml of maisala wine
  • ½ tsp five spice

Method

In a frying pan, place the sugar, balsamic vinegar, red wine, cinnamon and star anise. Reduce by ½ and add the berries. Cook for about 4-5 mins stirring gently occasionally. Remove and place in martini glasses to cool down at room temperature.

Over a pan of simmering water, place a bowl with the egg yolks, sugar, maisala wine and five spices. Whisk at a constant pace, fluff up the egg yolks until they double in volume. Spoon over the berries and sprinkle with sugar.  Serve and enjoy!
