Salmon Tartare, Cannelini Beans, Red Onion, Fennel And Tomato Salad

Salmon Tartare, Cannelini Beans, Red Onion, Fennel And Tomato SaladSalmon Tartare, very refreshing and easy to prepare; it can also be substituted with fresh tuna, both will have an excellent result.

Ingredients

  • 300 grams of fresh salmon
  • 1 can of cannelini beans
  • 1 x red onion
  • 1 x small fennel
  • 2 x large plum tomatoes
  • 1 x lemon
  • 50ml of olive oil
  • Salt and pepper
  • 100 grams of chopped parsley
  • 25ml of balsamic vinegar

Method

Finely chop the salmon to very small cube texture-like pieces. Season generously. Squeeze the juice of one lemon over it and add in the olive oil and parsley. Mix properly and place in the fridge. 

Using a mandoline, finely shave the red onion and fennel and then chop the tomatoes. Mix altogether in a bowl. Add some olive oil and balsamic vinegar.
