Why not round up a delightful easter meal with a stylish dessert that’s sure to impress your guests. The refreshing blend of fragrant elderflower balances beautifully with the citrus notes of orange and seasonal ‘superfood’ pomegranate.
- Sprinkle the powdered gelatine over the just-boiled water in a large jug, stirring to mix. Allow to dissolve for 3-4 minutes to give a completely clear liquid
- Using a sharp, serrated knife, peel the oranges removing all the pith. Slice them into segments, removing all the membrane. Share these oranges between 4 serving glasses and add about 2 teaspoons of pomegranate seeds to each one
- Add the bottlegreen elderflower cordial and pressé to the dissolved gelatine, stirring to mix. Pour into the glasses. Refrigerate until set – allowing about 2 hours
- To serve, decorate each jelly with fresh fig slices and a few seedless grapes.
Cook’s Tip:
- Make jellies with fresh or frozen raspberries and strawberries, and substitute bottlegreen elderflower for english summer or raspberry & lovage cordial with bottlegreen blackcurrant pressé
